Hello, foodies! Chef Anybody here, bringing you an authentic Afghan delicacy with a delightful twist—the classic ‘Kabuli Palaw’, made using the pure, aromatic Emaish Yellow Mustard Oil. Known for its irresistible blend of spices, tender meat, sweet raisins, and carrots, this dish is a crowd-pleaser that transforms any meal into a feast.

Let’s create this aromatic masterpiece together! And as always, I’m here to answer your questions and hear about your experience. So, let’s dive into the recipe.

Ingredients for Kabuli Palaw

For the rice:

  • ·         2 cups basmati rice (soaked for 30 minutes)
  • ·         4 cups water
  • ·         1 tsp salt

 For the topping:

  • ·         2 tbsp Emaish Yellow Mustard Oil
  • ·         2 large carrots, julienned
  • ·         ½ cup raisins
  • ·         ½ cup almonds or pistachios (optional)

 For the meat:

  • ·         500 grams mutton or chicken (cut into pieces)
  • ·         2 tbsp Emaish Yellow Mustard Oil
  • ·         1 large onion, finely sliced
  • ·         1 tsp cumin powder
  • ·         1 tsp garam masala
  • ·         1 tsp cinnamon powder
  • ·         ½ tsp cardamom powder
  • ·         Salt and pepper to taste

 For the rice mix:

  • ·         1 tsp sugar
  • ·         1 tsp saffron threads (soaked in 2 tbsp warm water)
  • ·         ½ cup stock (from cooking the meat)

Step-by-Step Recipe

1.       Preparing the Rice

Chef: Boil the water with a teaspoon of salt. Add the soaked rice and cook until 70% done. Drain the water and set the rice aside.

(Reader Note: Keep the rice firm; it’ll cook further later. Got a question? Ask away!)

 2.       Cooking the Meat

Chef: Heat Emaish Yellow Mustard Oil in a pan. Add sliced onions & sauté until golden

brown. Toss in the meat and let it sear on all sides.

Stir in cumin powder, garam masala, cinnamon powder, cardamom powder, salt, and pepper. Add enough water to cover the meat and simmer until tender. Remove the meat and save the stock for later.

(Chef Tip: The mustard oil enhances the spices, giving the meat a rich and earthy flavor!)

 3.       Preparing the Topping

Chef: Heat Emaish Yellow Mustard Oil in a separate pan. Sauté the julienned carrots until soft, then add the raisins. Cook until they puff up. Set aside.

*(Reader Tip: Add nuts like almonds or pistachios for extra crunch!)

 4.       Layering the Kabuli Palaw

Chef: In a heavy-bottomed pot, spread half the rice as the first layer. Add the cooked meat on top, then cover it with the remaining rice.

Drizzle the saffron water, sugar, and half a cup of stock evenly over the rice. Cover with a tight lid and cook on low heat for 20 minutes to steam.

*(Chef Question: Can you smell the magic happening in your kitchen? Tell me!)

 5.       Final Touch

Chef: Once the rice is fully cooked, gently fluff it. Transfer the Kabuli Palaw to a serving dish and top it with the sautéed carrots, raisins, and nuts.

Tasting Time: The Verdict

After serving myself a generous portion (purely for tasting purposes!), I couldn’t help but savor every bite. The Emaish Yellow Mustard Oil adds a subtle nutty aroma that beautifully balances the sweetness of the carrots and raisins with the spices of the meat. The saffron-infused rice melts in your mouth, while the tender meat adds the perfect texture.

This Kabuli Palaw is not just a dish—it’s an experience, a journey to Afghanistan, crafted with love and pure ingredients.
