Ingredients:
- · For this authentic Nargasi Kebab, you’ll need:
- · 250 grams minced mutton (you can substitute with chicken or a plant-based alternative)
- · 2 tablespoons of Emaish Yellow Mustard Oil
- · 1 large boiled egg (sliced into halves)
- · 2-3 cloves of garlic, minced
- · 1-inch ginger piece, minced
- · 1 green chili, finely chopped (adjust according to taste)
- · ½ teaspoon cumin powder
- · ½ teaspoon garam masala
- · ½ teaspoon red chili powder
- · Salt to taste
- · 1 egg, beaten (for coating)
- · Bread crumbs for coating
- · Fresh coriander leaves, finely chopped
Cooking Instructions:
Prepare the Minced Meat:
In a mixing bowl, combine the minced mutton with garlic, ginger, green chili, cumin powder, garam masala, red chili powder, and salt.
Pour in 1 tablespoon of Emaish Yellow Mustard Oil to enhance the flavor of the mince. Massage the oil and spices into the meat. Let this mixture rest for at least 30 minutes. This allows the spices to blend into the meat, creating a rich taste profile.
Shape the Kebabs:
Once marinated, take a small portion of the mince and flatten it on your palm.
Place half of a boiled egg in the center and cover it completely with the mince, shaping it like an egg.
(Tip from Chef Anybody: Keep your hands slightly oiled with Emaish Yellow Mustard Oil while shaping the kebabs. This prevents the mince from sticking and gives a beautiful shine to the kebabs.)
Coat the Kebabs:
Roll each kebab in breadcrumbs, then dip in the beaten egg, and coat again with breadcrumbs for an extra-crispy outer layer.
Fry to Perfection:
· Heat 1 tablespoon of Emaish Yellow Mustard Oil in a frying pan over medium heat. This oil has a high smoking point, ensuring the kebabs are fried perfectly and retain their unique flavor.
Place the kebabs in the pan and fry until they are golden brown on all sides. This should take about 5-7 minutes. You’ll notice the rich, nutty aroma from the mustard oil enhancing the spices and meat.
Serve & Garnish:
- · Remove the kebabs from the pan and place them on a paper towel to absorb any excess oil.
- · Serve hot, garnished with chopped coriander leaves, a sprinkle of garam masala, and a side of green chutney or yogurt dip.
Chef’s Note & Tasting:
After preparing these delicious Nargasi Kebabs, I couldn’t resist tasting them myself! The smoky essence of Emaish Yellow Mustard Oil takes the flavors up a notch, making the kebabs not only tender and juicy on the inside but also crispy on the outside. Each bite is a burst of flavors, with the earthy aroma of mustard oil blending seamlessly with the rich spices.
