Ingredients:
·         Whole Wheat Flour – 2 cups
·         Jaggery (Gud) – 1 cup (finely grated)
·         Fennel Seeds (Saunf) – 1 tsp
·         Cardamom Powder (Elaichi) – 1/2 tsp
·         Grated Coconut – 1/4 cup (optional, for added richness)
·         Emaish Yellow Mustard Oil – 2-3 tbsp (for kneading) + 500 ml (for frying)
·         Water – as required

 
Instructions:
Prepare the Jaggery Solution: Begin by adding the grated jaggery to a small saucepan with a few tablespoons of water. Gently heat on a low flame until the jaggery melts completely. Once melted, set aside to cool. Make sure the solution is warm and not hot when you add it to the dough.
Mix Dry Ingredients: In a large mixing bowl, add whole wheat flour, fennel seeds, cardamom powder, and grated coconut. Mix well.

Add Emaish Yellow Mustard Oil: Pour in 2-3 tablespoons of Emaish Yellow Mustard Oil into the dry mix. Rub the oil into the flour using your fingertips until it resembles a sandy texture. This step ensures the Thekua stays crispy while infusing it with the health benefits of mustard oil, rich in omega-3 and antioxidants.
 
Knead the Dough: Gradually pour the jaggery solution into the flour mixture, kneading to form a stiff yet pliable dough. If the dough is too dry, add a small amount of water. Let the dough rest for about 10 minutes to allow flavors to meld.

Shape the Thekua: Take small portions of the dough and shape them into round or oval discs, flattening them slightly. Traditionally, Thekua is shaped by hand, but you can also use molds for decorative designs.

Fry to Perfection: Heat the remaining Emaish Yellow Mustard Oil in a deep frying pan over medium heat. Once hot, gently slide in the shaped dough pieces.
