Ingredients for
Turkish Lamb Pide
For the dough:
- · 2 ½ cups all-purpose flour
- · 1 tsp sugar
- · 1 tsp salt
- · 2 tsp dry yeast
- · ¾ cup warm water
- · 2 tbsp Emaish Yellow Mustard Oil
For the lamb filling:
- · 250 grams minced lamb
- · 2 tbsp Emaish Yellow Mustard Oil
- · 1 onion, finely chopped
- · 2 garlic cloves, minced
- · 1 tomato, finely chopped
- · ½ green bell pepper, diced
- · 1 tsp cumin powder
- · 1 tsp paprika
- · ½ tsp chili flakes (optional)
- · Salt and pepper to taste
- · 2 tbsp fresh parsley, chopped
- · Lemon wedges for garnish
Let’s Cook Together!
1. Preparing the Dough
Chef Anybody:
Reshma, start by activating the yeast. Mix warm water, sugar, and yeast in a
small bowl and let it sit for 5 minutes until frothy.
Your Turn: Have a
question about the consistency of the yeast? Drop a comment!
Next, mix flour and salt in a large bowl. Add the activated
yeast mixture and Emaish Yellow Mustard
Oil. Knead until you have a soft, smooth dough. Cover it with a damp cloth
and let it rise for an hour.
(Chef Anybody’s Tip:
Emaish Yellow Mustard Oil gives the dough a slight nutty flavor and makes it
easier to handle!)
2. Making the Lamb Filling
Chef Anybody: Heat Emaish Yellow Mustard Oil in a pan. Add
onions and garlic, sauté until golden. Toss in minced lamb, tomato, and bell
pepper. Stir in cumin, paprika, chili flakes, salt, and pepper. Cook until the
lamb is tender and aromatic. Finish with fresh parsley. Let it cool slightly.
(Chef Anybody’s Note: This filling is the heart of your
pide, so taste and adjust the seasoning to your liking.)
3. Shaping the Pide
Chef Anybody’s : Divide the dough into
4 equal portions. Roll each into an oval shape. Spread the lamb filling in the
center, leaving the edges clean. Fold the sides inward to create a boat shape,
pinching the ends to seal.
*( Chef Anybody’s Challenge: Show off your perfectly shaped pide by sharing a
picture!)
4. Baking to Perfection
Chef: Preheat your oven to 220°C (430°F). Place the pides on
a baking sheet lined with parchment paper. Brush the edges with Emaish Yellow
Mustard Oil for a golden crust. Bake for 15-20 minutes until crispy and golden.
5. Serving with Love
Chef: Once baked, serve the pides warm, garnished with lemon
wedges and a sprinkle of fresh parsley.
(Chef Anybody’s Request:
Don’t forget to tell me Dr. Shoeb’s reaction!)
